Founded in 2014, the initiative encourages millions of people around the world to reduce or eliminate the consumption of animal products for one month, experimenting with a diet rich in vegetables, legumes, grains, and fruit: an opportunity to take a small step towards a more varied diet and, most importantly, a sustainable one.

In 2024, over 25 million people participated in this global challenge, and the projections for 2025 are even more promising. This vegan month not only offers the chance to discover delicious and creative dishes, but also serves as an important opportunity to embrace a more sustainable lifestyle.

On the occasion of Veganuary 2025, Cesare Morisco, co-founder and art director of CoccoleBimbi, who promotes sustainability values and respect for the environment and animals, has decided to share a 100% vegan recipe.

Cesare firmly believes that sustainability and respect for animals are fundamental principles for a better future and invites all families to experiment with new eating habits, involving children in this challenge.

For the occasion, Cesare chose a green location, just a few steps from the sea: Tenuta Terre di San Vito. This estate, rich in history, represents a deep connection with the land and a dream passed down from generation to generation. The project, led by the De Napoli family, aims to keep alive the connection with their land every day, celebrating the slow rhythms of the seasons, the craftsmanship, and the artisanal production processes that distinguish their products.

Chickpea Bars: an Easy and Delicious Recipe

To make the Veganuary experience even more special, Cesare and his little helper Davide present a fun and healthy recipe: Chickpea Chocolate Bars. A 100% vegan dessert that is easy to prepare even with children, and will surely be loved by the whole family.

Here’s how to make it:

Ingredients:
• 460g of cooked chickpeas
• 1 tablespoon of cornstarch
• 30 ml of vegetable oil
• 270g of dark chocolate
• Pistachio crumbs

Preparation:
1. In a bowl, add the cooked chickpeas, cornstarch, and vegetable oil. Mix well;
2. Spread the mixture in a baking pan lined with parchment paper and bake in a preheated oven at 200°C for about 30 minutes, until the chickpeas are golden and crispy;
3. Once baked, allow them to cool completely. Then, melt the dark chocolate and pour it over the crispy chickpeas. Stir to combine everything;
4. Spread the mixture on a baking sheet lined with parchment paper, decorating with pistachio crumbs/coconut/freeze-dried berries or dried fruits to taste;
5. Let it cool completely, then break the nougat into small pieces, ready to be enjoyed.
