In an era in which environmental awareness is no longer an option but a necessity, the brand chooses to stand as a spokesperson for concrete values, transforming them into educational and authentic experiences. For CoccoleBimbi, sustainability also lies in the way children learn to understand and respect what surrounds them: nature, animals, and food. It is precisely from this dialogue that the decision to take part in Veganuary 2026 was born—an ideal opportunity to bring together education, creativity, and responsibility. Within this framework, Cesare Morisco, together with La Smagnifica Sofia and Jacopo, prepare a 100% vegan recipe: a simple gesture that becomes a symbol of a more conscious and respectful approach toward the environment and animals.

A month to discover a more conscious way of living

Veganuary is one of the most meaningful initiatives at the beginning of the year. Launched in 2014, it invites people around the world to try a completely plant-based diet from January 1st to 31st. What started as an invitation has grown over the years into a truly global movement.

In 2025, more than 25.8 million people took part in the initiative, helping make the plant-based theme central to social conversations, everyday choices, and the development of new products. A trend set to continue growing in 2026 as well.

Veganuary is not just a dietary challenge, but an opportunity to discover creative and flavorful dishes, reduce environmental impact, and take an act of respect toward animals. A small change that can generate a real impact.

I Racconti del Carrubo, the organic farm

There is a place that CoccoleBimbi loves to return to: the sanctuary I Racconti del Carrubo.

This eco-sustainable organic farm was born from Debora and Fabio’s love for nature and for every living being. Here, rescued animals from situations of abandonment receive care, affection, and above all freedom. Every space is designed according to bio-architecture principles, using eco-friendly, locally sourced materials, in perfect harmony with the surrounding landscape.

Within this authentic and inspiring setting, cooking becomes a symbolic act: a shared moment that brings together education, respect, and creativity.

Completing the experience is a strong focus on sustainable fashion: the little chefs wear pieces by Molo, a brand recognized for its use of organic and certified materials—such as GOTS, OCS, and GRS—and for its responsible approach to production processes.

Wood-Fired Baked Apple Donuts

To make the Veganuary experience even more special, Cesare and his little helper Davide present a fun and healthy recipe: Chickpea Chocolate Bars. A 100% vegan dessert that’s easy to prepare even with children—and sure to be loved by the whole family.

Here’s how to make it:

Ingredients:
• 460 g cooked chickpeas
• 1 tablespoon cornstarch
• 30 ml vegetable oil
• 270 g dark chocolate
• Pistachio crumbs


Preparation:

  1. In a bowl, combine the cooked chickpeas, cornstarch, and vegetable oil. Mix well.
  2. Spread the mixture onto a baking pan lined with parchment paper and bake in a preheated oven at 200°C (390°F) for about 30 minutes, until the chickpeas are golden and crispy.
  3. Once baked, let them cool completely. Melt the dark chocolate and pour it over the crispy chickpeas, stirring to combine.
  4. Spread the mixture onto a parchment-lined baking sheet and decorate with pistachio crumbs, coconut, freeze-dried berries, or dried fruit to taste.
  5. Let it cool completely, then break into small pieces, ready to enjoy.

Apple Donuts in a Few Simple Steps

Cut the apples into thick slices and remove the core to create donut-shaped rings.
Unroll the puff pastry and cut it into thin strips.
Wrap each apple slice with the puff pastry.
In a bowl, mix the brown sugar, cinnamon, and salt.
Dip each donut first into the plant-based milk, then into the spiced sugar mixture.
Place the donuts on a baking tray, away from direct flame, and bake in the preheated wood-fired oven at approximately 180–200 °C for 10 minutes, until golden.
